Avocado Milkshake


INGREDIENTS

  • 1 avocado (remove the stone)
  • 2 cups of fresh milk
  • 1 tsp of manuka honey
  • 2 bottle of 65ml yakult(vitagen)

    METHOD
  1. Put in all the ingredients into the electric blender, blend till just combined. Serve immediately.

Tiramisu Cake


INGREDIENTS

  • 4 eggs
  • 250g mascarpone
  • 300ml thickend cream
  • 1 large pack Sponge finger biscuits
  • 1/3cup caster sugar
  • 2tbsp coffee powder
  • 1/2 cup orange juice
  • Plastic wrap or foil
  • Cocoa powder or milo for dusting


METHOD

  1. Coffee power mix with warm water,Add orange juice. Set aside
  2. Beat 4 eggwhites in a medium bowl with electric beaters until sofe peaks form.
  3. Beat the 4 egg yolks, caster sugar in a large bowl with electric beaters until pale and thick. whipped the cream, add the mascarpone,mixing gently until just combined.
  4. Using a large metal spoon, gently fold eggwhites into the mascarpone mixture.
  5. Dip enough biscuits into the coffee mix with orange juice to cover the cake base. Cover biscuits with half mascarpone mixture. Repeat layer 1 time.
  6. Cover with plastic wrap or foil and refrigerate for at least 6hrs. Dust with generously with cocoa and serve.

敦鸡补汤 (Traditional Chicken Soup)


调理 : 补中益气,明目补血,妇女产后,经期后补身,或体弱,病后健康均有显著效果。
Ingredients
  • ½ Free range chicken
  • 3 long pieces Polygonatum (玉竹)
  • 6 pieces bei qi (北萁), cut into small pieces
  • 3 tbsp redmedler berry (杞子)
  • 5 bowl of boiling water
  • ½ tsp salt
  • 5 slice Angelica root(当归)
  • 6 slice Yam(准山)
  • 3 long stick Pilose asiabell root (党叁)
  • 5 slice of ginger

Method

  1. Wash the ingredients, Add in 5 bowls of boiling water in crock pot, add in the ingredients and chicken.
  2. Cover the cover and put in a steamer.
  3. Add in water and boil. Simmer for 2-3 hours.
  4. Add salt and serve hot.

Fruit Tartlets

Ingredients
  • 3 sheet shortcrust pastry
  • 1 punnet of strawberries, halved
  • Icing sugar for dusting
  • 200ml thickened cream, whipped
  • 100g dark cooking chocolate
  • 3 tbsp of milk

Method

  1. Preheat oven to 180C. Place the sheets of pastry on your board and cut around the pastry moulds. Carefully ease the pastry into the moulds and, using a knife, cut cleanly around rim of the mould. You will need to lightly spray the patty tins before adding the pastry.
  2. Line each case with paper and fill with baking weights. Place in the oven for 8 minutes, then remove the paper and weights and return to the oven for a further 2 to 3 minutes or until the pastry is completely cooked. Remove and place on a cooling rack.
  3. Melted the cooking chocolate with milk.
  4. When the tartlets are cool enough, coat the chocolate around the tartlets , fill with whipped cream in the middle of case and add with strawberries or any fruits around.
  5. Dust with icing sugar and serve.

Hollander Torte



Ingredients

Rich Short Crust Pastry

  • 100g butter/margerine
  • 60g icing sugar
  • 1 egg yolk
  • 200g plain flour,sifted
  • 2tbsp strawberry jam(or any fruit jam)

Filing

  • 120g butter/magerine
  • 80g castor sugar
  • 2 eggs
  • 80g plain flour,sifted
  • 100g ground almond

    Decoration
  • 30g flaked almond

Method

  1. Pastry : Cream butter and icing sugar till light, add egg yolk and cream till well-combined. Add flour and mix into a pliable dough. Rest for 20minutes.
  2. Roll pastry between two sheets of plastic till 3mm thick and big enough to line a 22cm/9” pie dish.
  3. Remove the top of plastic sheet, invert and place the pastry over the pie dish. Press neatly and remove the excess pastry from the sides. Brush strawberry jam on the base.
  4. Filling : Cream butter and castor sugar till light, add eggs one at a time, beating well after each addition. Fold in shifted flour and ground almond, mix till well-combined.
  5. Pour filling mixture onto the pie dish and spread neatly. Sprinkle flaked almonds on top as decoration.
  6. Bake in a pre-heated oven at 180c for 35-40 minutes till golden browmn. Remove, leave to cool before serving.


Note: This tasty and easy to make pie is ideal to serve for afternoon tea. If no big pie dish is available, you may use petitin to make into small pies.

烧包 (Char Siew Pau)


Ingredients

  • 350g chicken breast,diced
  • 1/2 cup green peas
  • 1 cup corn kernel
  • 1 carrot,diced
  • 1 big potato,diced
  • 1 tsp chopped garlic
  • 3 tbsp of olive oil
  • 3 tbsp of ‘char siew’ sauce
  • 3 x 187g sheet ready prepared butter puff pastry
  • 1 egg (beaten)
  • Some waterSome sesame seed (sprinkle on top)

Method
1
. Preheat the oven 220°C
2. Heat up oil, sauté garlic till fragrant.
3. Add chicken, potato, corn, carrot, stir till cooked.
4. Add green peas, char siew sauce, some water.
5. Dish and leave to cool before using.
6. Cut the pastry into small square, each pastry can make 9.
7. Wrap up filling. Glaze with egg, sprinkle some sesame seed on top
and bake at 220°C till golden brown, about 25minutes.
8. Remove and serve hot. Make 27.


Note: When wrapping up filling, avoid gravy sauce from sticking onto the sealing side.Otherwise it will open up during baking.

Orange Blossom Cup Cake

INGREDIENTS
  • 125g butter, softened
  • 2 tespoons finely grated orange rind
  • 2/3 cup caster sugar
  • 2 eggs
  • 1 cup self-raising flour
  • 1/3 cup almond meal
  • 1/2 cup flat almond
  • 1/4 cup ornage juice
  • 2 tablespoon milk

METHOD
  1. Preheat oven to 180°C or 160°C fan forced. Line 24 small paper cases.
  2. Beat butter, rind, sugar and eggs in a bowl with electric mixer until light and fluffy.
  3. Stir in sifted flours, almond meal, flat almond, juice and milk.
  4. Divide mixture among cases.
  5. Bake cakes about 25minutes.
  6. Turn cakes onto wire rack to cool.

萍果派 (Mini Apple Pie)



Ingredients

  • 5g butter
  • 1/2 cup brown sugar
  • 2 fuji apples, cored & chopped
  • 1 teaspoon cinamon
  • 2 x 187g sheet ready prepared butter puff pastry
  • 25g butter, melted, extra
  • 1 tablespoon demerara sugar(optional)


Method

1. Preheat the oven 220°C
2. Heat a large non-stick frying pan over low heat.
3. Add butter, sugar, and stir until the butter is melted and sugar is dissolved.
4. Add the apples and cinnamon and simmer for 5 min or until apple are tender.
5. Remove from the heat and allow to cool completely.
6. Place a pastry sheet on a baking tray lined with baking paper.
7. Spoon 16 tbsp of the apple mixture onto the sheet to create 16 pies,
leaving space to seal the edge.
8. Top with the remaining pastry sheet.
9. Brush with melted butter and sprinkle over demerara sugar.
10. Bake for 15 min or until golden and crispy.
11. Allow to cool. Make 16
